Chef Poom – Jakkaphum Boonyakom
is a Thai cuisine specialist and the Grand Prize winner in the Thai Fine Dining category at Chef Fest Thailand
organized by the Tourism Authority of Thailand. The competition is dedicated to discovering and celebrating Thailand’s finest chefs.
He was also a contestant on Top Chef Thailand Season 2 and has served as a judge on various culinary programs. Chef Poom crafts every dish with meticulous care and is widely recognized for his ability to elevate Thai cuisine onto the global stage.
Chef Poom comes from an old Thai noble family and was raised in a household deeply rooted in Thailand’s culinary history. He learned the art of cooking from his grandmother, who once prepared food within the royal palace. This upbringing nurtured his passion for authentic Thai cuisine, meticulous cooking methods, and the subtle balance of refined flavors.
Chef Poom began his culinary journey at his family’s garden estate, first cultivated during the time of his great-grandfather. The garden is rich with a wide variety of native Thai plants, instilling in him a deep understanding of the importance of natural ingredients and the preservation of true Thai culinary identity from source to table. He later pursued formal studies in the arts, following in the footsteps of his uncle, a National Artist of Thailand, and continued his education in agriculture in Okinawa, Japan. Chef Poom also plays a key role as an organic farm consultant, supporting the development of high-quality ingredients and promoting sustainable natural farming practices.
Before founding WI-SET-WI-SO, Chef Poom traveled extensively throughout Thailand to learn culinary techniques directly from farmers, local fishermen, and long-established traditional eateries. He also studied ancient cooking methods, such as stone-grinding rice into flour and adapting traditional tools for modern culinary use.
These experiences deepened his understanding of local ingredients and reinforced his commitment to preserving authentic cooking methods and original Thai flavors, a philosophy that remains at the heart of the restaurant today.
Chef Poom remains devoted to a culinary philosophy that prioritizes the finest ingredients sourced from local farmers. He presents Thai cuisine grounded in tradition while incorporating modern techniques, creating a contemporary dining experience that preserves the essence of Thai identity in a refined and relevant form.
